Step 1: Sauté the Aromatics
- First things first, add the olive oil to your medium pot over medium heat. Toss in the diced onion along with the smoked paprika and salt. Stir everything together and let it cook for about 3-5 minutes. You want the onions to become translucent and fragrant. It's a beautiful start to your beans.
Step 2: Combine the Main Ingredients
- Next, add your rinsed and drained pinto beans to the pot. It's important to rinse them to remove any excess sodium or preservatives from the can. Now, add the Dijon mustard, ketchup, Worcestershire sauce, apple cider vinegar, and packed brown sugar. This is where the magic begins! Give it all a good stir until the beans are nicely coated in that delicious sauce.
Step 3: Stir and Simmer
- Let the mixture cook on medium heat for about 4-5 minutes. This allows the flavors to meld nicely together. You might want to stand back for a moment and savor that aroma wafting through your kitchen.
Step 4: Add Liquefaction and Simmer Gently
- Once everything’s mixed well, pour in the vegetable broth until the beans are just covered. This will prevent them from drying out during cooking. Bring the mixture to a gentle simmer on medium heat. Allow it to cook for another 5-7 minutes until everything is heated through. Don’t forget to give it a stir occasionally, just to ensure nothing sticks to the bottom.
