One of my personal favorites that never fails to captivate the taste buds is the BBQ jackfruit sandwich, topped with a zesty avocado slaw.

Ingredients
  

For the BBQ Jackfruit
  • 1 tablespoon tomato paste enriches the dish with depth and a hint of umami
  • 2 cans young green jackfruit 20 ounces each
  • 3/4 cup rich, vegan-friendly BBQ sauce brings all the flavors together
  • 1/4 cup smoky BBQ spice blend you can create this by mixing below
  • 2 tablespoons brown sugar
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
For the Creamy Avocado Slaw
  • 2 cups finely shredded cabbage and carrot blend a cruciferous mix for crunch
  • 1/2 ripe avocado mashed, to create creamy texture
  • 1 tablespoon pure maple syrup or any sweetener
  • 1 of Juice lemon or lime for a refreshing zing
  • Splash of water to thin the slaw as needed
  • Pinch of salt and black pepper adjust to taste
To Serve
  • 1/2 cup roasted salted cashews chopped, for added texture and crunch
  • 4 to 6 whole grain vegan buns gluten-free works if needed

Method
 

Step 1: Prepare the Jackfruit
  1. First, you’ll want to open those cans of jackfruit. Drain them well and rinse under cold water. The jackfruit is quite fibrous, so we’ll pull it apart into chunks, mimicking pulled meat. Don’t worry; this part is messy but also fun!
Step 2: Cook the Jackfruit
  1. In a large skillet over medium heat, add a tablespoon of olive oil. Toss in the jackfruit and sauté for about five minutes. Add the tomato paste and spice blend, mixing everything well. Let this simmer for another five minutes until well combined.
Step 3: Add the BBQ Sauce
  1. Pour in the BBQ sauce and stir. Let it cook for about 10-15 minutes, stirring occasionally. The jackfruit should absorb the flavors while becoming tender and easy to shred further.
Step 4: Make the Avocado Slaw
  1. In a mixing bowl, combine the shredded cabbage and carrot mix. In another bowl, mash the avocado, then add the maple syrup, lemon juice, splash of water, salt, and pepper. Whisk it together until it’s creamy. Now, toss the slaw with the avocado dressing until everything is well coated.
Step 5: Assemble the Sandwiches
  1. Grab your buns. Load them with the BBQ jackfruit, followed by a generous helping of avocado slaw. Top with chopped cashews, if you like that extra crunch!
