Ingredients

  • 5 large eggs, whisked
  • 2 tablespoons unsalted butter
  • 1/2 cup crushed tomatoes
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 1 garlic clove, finely chopped
  • 1/4 cup freshly chopped basil leaves
  • 2 cups shredded mozzarella blend 8 ounces
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly cracked black pepper
  • A pinch of red pepper flakes

Method

Step 1: Preheat the Oven
  1. First things first, preheat your oven to 375°F (190°C). This step is crucial. Getting the oven hot ensures your frittata cooks evenly, puffing up beautifully.
Step 2: Sauté the Veggies
  1. In a large oven-safe skillet, melt the butter over medium heat. Once it’s bubbly, toss in the diced onion and bell pepper. Sauté for about five minutes until they are soft and fragrant. Add the garlic and cook for another minute.
This step builds a flavorful foundation for the dish.
Step 3: Mix the Eggs and Ingredients
  1. In a large bowl, whisk together the eggs, crushed tomatoes, basil, sea salt, black pepper, soy sauce, and red pepper flakes. Make sure everything is well-combined. Then, fold in the sautéed veggies along with the mozzarella. This mixture should smell incredible.
Step 4: Pour the Mixture into the Skillet
  1. Pour your egg and veggie mixture back into the skillet over the sautéed veggies. Spread it out evenly.
Step 5: Top it Off
  1. Sprinkle the panko breadcrumbs and grated Parmesan cheese on top. This will create a lovely, crispy crust while baking.
Step 6: Bake the Frittata
  1. Transfer the skillet to your preheated oven and bake for 25-30 minutes. Check for doneness by inserting a knife in the center. If it comes out clean, you’re golden!
Step 7: Cool and Serve
  1. Once it’s out of the oven, let it cool for a few minutes. Slice it up into wedges and serve warm.

Notes

  • Experiment with herbs: Basil is great, but feel free to add parsley, thyme, or even a pinch of oregano for extra flavor.
  • Personalize it: Add some cooked sausage, ham, or even bacon for a meatier version. It’s Christmas; celebrate!
  • Make it ahead: This frittata can be made a day in advance. Just reheat it in the oven for a few minutes before serving.
  • Avoid overcrowding: If your skillet is too small, consider dividing the mixture into two pans. Crowding can lead to uneven cooking.
  • Garnish for flair: A sprinkle of freshly chopped herbs or a drizzle of balsamic glaze before serving can take your frittata to a new level.
