  • 1/2 cup of shredded cheddar cheese or your cheese of choice

  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 teaspoon of garlic powder optional, but highly recommended
  • 1/4 cup of diced onions optional
  • Cooking spray or oil for greasing the muffin tin

Method
 

Step 1: Preheat Your Oven
  1. First things first: Preheat your oven to 350°F (about 175°C). This is crucial for ensuring that your muffins cook evenly and develop a nice golden color.
Step 2: Prepare the Muffin Tin
  1. Grab your muffin tin and coat it with cooking spray or oil. This prevents the muffins from sticking and makes cleanup easier. If you’re feeling fancy, consider lining the muffin cups with parchment paper.
Step 3: Whisk the Eggs
  1. In a spacious bowl, whisk the eggs until they are light and fluffy. Add the milk and mix in as well. The milk adds creaminess and helps to fluff up the muffins.
Step 4: Add in the Veggies and Cheese
  1. Gently fold in the diced bell peppers, spinach, onions, and shredded cheese into the egg mixture. Season with salt, black pepper, and garlic powder. Use a spatula to ensure all ingredients are evenly mixed.
Step 5: Fill the Muffin Cups
  1. Scoop the egg mixture into each muffin cup, filling them about 3/4 full. Be careful not to overfill them; these muffins will rise as they bake.
