Step 1: Prepare the Sweet Potato Purée
- First, you’ll need to make the sweet potato purée. You can roast or steam your sweet potatoes until tender. Once cooled, scoop out the flesh and mash it with a fork or blend until smooth. Aim for about 1 cup of purée.
Step 2: Preheat Your Oven
- Preheat your oven to 350°F (175°C). Prepare an 8x8-inch baking pan by lightly greasing it or lining it with parchment paper for easy removal.
Step 3: Mix the Dry Ingredients
- In a mixing bowl, combine the cocoa powder, oat flour, baking powder, ground cinnamon, and espresso powder. Stir well to combine and ensure there are no lumps.
Step 4: Combine the Wet Ingredients
- In another bowl, mix the sweet potato purée, almond butter (or peanut butter), avocado oil, maple syrup, and vanilla extract. Whisk until well blended.
Step 5: Combine Wet and Dry Mixtures
- Slowly add the dry mixture to the wet mixture. Stir gently until all ingredients are combined, taking care not to overmix. If you choose to add chocolate chips, fold them in at this stage.
Step 6: Fold in Nuts
- Finally, add the chopped pecans. They will give a delightful texture and crunch.
Step 7: Bake the Brownies
- Transfer the brownie batter into the prepared pan. Spread it evenly with a spatula. Bake in the preheated oven for 20-25 minutes. You'll know they’re done when the edges look set, but a toothpick inserted in the center should still come out with a few moist crumbs.
Step 8: Cool and Enjoy
- Allow the brownies to cool in the pan for at least 15 minutes. Once they’re set, slice them into squares and enjoy! The fudge consistency is best appreciated when they remain slightly warm.
