 Believe me, they are not just a pretty dessert; they are also packed with nutrients. Sweet potatoes add moisture and a subtle sweetness that makes these brownies irresistibly fudgy. You might think, “Sweet potatoes in brownies?” but trust me, it’s a game changer.
In my kitchen experiments, I have tried many brownie recipes, but this one holds a special place. Using sweet potatoes not only boosts the nutritional value but also adds a unique flavor that pairs perfectly with the rich cocoa.

Ingredients
  

  • 1/2 cup unsweetened cocoa powder: Choose a rich, dark variety for that deep chocolate flavor.
  • 1/2 cup chopped pecans: These provide a buttery crunch. Walnuts can work too, but pecans shine in this recipe.
  • 1 tsp baking powder: This helps the brownies rise lightly.
  • 1 tsp vanilla extract: Enhances the overall flavor profile.
  • 2/3 cup oat flour: You could use gluten-free all-purpose flour if needed. Alternative flours like almond or coconut will change the texture slightly.
  • 1 cup smooth sweet potato purée: See below for how to make your own!
  • 11/2 Tbsp avocado oil: Alternatively, use melted coconut oil or extra virgin olive oil.
  • 1/2 tsp ground cinnamon: Adds a warm note that complements the chocolate.
  • 1/2 cup creamy almond butter or natural peanut butter: Aim for unsweetened and unsalted for the best flavor.
  • 1/4 cup dairy-free chocolate chips: Optional, but a delicious addition.
  • 2/3 cup pure maple syrup: For natural sweetness.
  • 1/2 tsp instant espresso powder: Enhances the chocolate flavor without making these taste like coffee.

Method
 

Step 1: Prepare the Sweet Potato Purée
  1. First, you’ll need to make the sweet potato purée. You can roast or steam your sweet potatoes until tender. 
    Once cooled, scoop out the flesh and mash it with a fork or blend until smooth. Aim for about 1 cup of purée.
Step 2: Preheat Your Oven
  1. Preheat your oven to 350°F (175°C). Prepare an 8x8-inch baking pan by lightly greasing it or lining it with parchment paper for easy removal.
Step 3: Mix the Dry Ingredients
  1. In a mixing bowl, combine the cocoa powder, oat flour, baking powder, ground cinnamon, and espresso powder. Stir well to combine and ensure there are no lumps.
Step 4: Combine the Wet Ingredients
  1. In another bowl, mix the sweet potato purée, almond butter (or peanut butter), avocado oil, maple syrup, and vanilla extract. Whisk until well blended.
Step 5: Combine Wet and Dry Mixtures
  1. Slowly add the dry mixture to the wet mixture. Stir gently until all ingredients are combined, taking care not to overmix. If you choose to add chocolate chips, fold them in at this stage.
Step 6: Fold in Nuts
  1. Finally, add the chopped pecans. They will give a delightful texture and crunch.
Step 7: Bake the Brownies
  1. Transfer the brownie batter into the prepared pan. Spread it evenly with a spatula. Bake in the preheated oven for 20-25 minutes. 
    You'll know they’re done when the edges look set, but a toothpick inserted in the center should still come out with a few moist crumbs.
