Ingredients
  

  • 1/2 teaspoon lemon zest
  • 1 tablespoon olive oil
  • 1 large cauliflower crown
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Step 1: Prepare Your Cauliflower
  1. Start by removing the leaves from the cauliflower crown. Place the crown on a cutting board. Be careful when handling. 
    Cut the cauliflower into quarters, and then into smaller florets. The goal is to get as many small pieces as possible to make the next steps easier.
Step 2: Rice That Cauliflower
  1. You can rice your cauliflower in a couple of ways. For a quick method, toss the florets into a food processor. Pulse them until they resemble grains of rice. Do this in batches if necessary to avoid overcrowding the processor. 
    Alternatively, if you don’t have a food processor, you can use a box grater. Just grate the florets down into rice-sized pieces.
Step 3: Sauté the Cauliflower Rice
  1. Next, it’s time to cook up the cauliflower rice. Heat the olive oil in a large skillet over medium heat. Add the cauliflower rice and stir it around for a few minutes. It should start to soften and turn a lovely golden color. 
    Sprinkle in the garlic powder, onion powder, salt, and pepper. Continue cooking for another few minutes until the cauliflower rice is tender but still has a bit of bite.
Step 4: Add Lemon Zest and Garnish
  1. Once the rice is cooked to your liking, remove it from the heat. Don’t forget to add the lemon zest! This will add a pop of freshness that takes it to another level. Garnish with freshly chopped parsley and serve to impress your guests!

  • Don’t Overcook: Cauliflower rice can turn mushy quickly. Keep an eye on it.
