Step 1: Preheat the Oven

Step 2: Prepare the Squash
- Carefully slice the spaghetti squash in half lengthwise. Use a sharp knife, and rock it back and forth to make cutting easier. Watch your fingers! Scoop out the seeds with a spoon. You can discard these or save them for roasting later.
Step 3: Season the Squash
- Drizzle the inside of each half with extra virgin olive oil, then sprinkle salt, pepper, and garlic powder. If you like a bit of citrus zing, add lemon juice for an extra flavor kick. Rub the seasoning all over to ensure it’s evenly distributed.
Step 4: Arrange on Baking Tray
- Place the squash halves cut side down on a lined baking sheet. This positioning helps steam the squash, making it tender faster.
Step 5: Roast
- Pop the baking sheet into the preheated oven. Roast for about 25-30 minutes, depending on the size of the squash. You want it fork-tender. A good test is to poke it with a fork; if it easily penetrates, you’re ready to go!
Step 6: Scrape the Squash
- Once it’s done roasting, let it cool for a bit before handling. Use a fork to scrape out the strands. They should come apart easily if you roasted it correctly.

- Serve your roasted spaghetti squash as a base for your favorite pasta dishes, salads, or even as a standalone side.
