  • 1 tablespoon lemon juice

  • 1 medium spaghetti squash 3 to 4 pounds
  • 3/4 teaspoon sea salt, adjust to taste
  • 1/4 teaspoon freshly cracked black pepper

Method
 

Step 1: Preheat the Oven
  1. Set your oven to 425°F (220°C). Preheating it ensures even cooking, helping to achieve that perfect, tender squash.
Step 2: Prepare the Squash
  1. Carefully slice the spaghetti squash in half lengthwise. Use a sharp knife, and rock it back and forth to make cutting easier. Watch your fingers! Scoop out the seeds with a spoon. You can discard these or save them for roasting later.
Step 3: Season the Squash
  1. Drizzle the inside of each half with extra virgin olive oil, then sprinkle salt, pepper, and garlic powder. If you like a bit of citrus zing, add lemon juice for an extra flavor kick. Rub the seasoning all over to ensure it’s evenly distributed.
Step 4: Arrange on Baking Tray
  1. Place the squash halves cut side down on a lined baking sheet. This positioning helps steam the squash, making it tender faster.
