Ingredients
  

  • 6 large eggs
  • 1 cup freshly grated Parmesan cheese
  • 1/4 pound of your favorite long pasta or approximately ½ pound of pre-cooked pasta spaghetti, linguine, fettuccine, or another variety
  • 4 tablespoons unsalted butter or high-quality extra virgin olive oil
  • Salt and freshly ground black pepper to taste
  • 1/4 cup finely diced pancetta, crisp bacon, or thinly sliced prosciutto optional, but adds depth
  • 1 tablespoon of fresh thyme leaves
  • 1 teaspoon of freshly grated lemon zest

Method
 

Step 1: Preheat the Oven
  1. First, preheat your oven to 350°F (175°C). This will ensure that your frittata cooks evenly and gets a lovely golden top.
Step 2: Cook Your Pasta
  1. In a large pot, bring salted water to a boil. Add your pasta and cook it according to package instructions until al dente. Once done, drain and set aside. You can also cook the pasta a day in advance—just keep it stored in the fridge.
Step 3: Prepare the Egg Mixture
  1. In a mixing bowl, crack the six large eggs. Beat them until the yolks and whites are fully combined. Season with salt and freshly ground black pepper. Add the freshly grated Parmesan cheese, thyme leaves, and lemon zest, mixing well.
Step 4: Cook the Pork Product
  1. In a large, oven-safe skillet, heat the butter or olive oil over medium heat. If using pancetta, bacon, or prosciutto, add it to the skillet. Cook until crisp; this will take about 4 to 5 minutes. The fat rendered will flavor the rest of your frittata beautifully.
Step 5: Combine Ingredients
  1. Now, stir in the cooked pasta into the skillet, coating it in the deliciously rendered fat. Pour the egg mixture over the pasta, allowing it to seep through the layers. Gently shake the skillet to ensure even distribution.
Step 6: Cook on the Stovetop
  1. Cook the pasta frittata on the stovetop. Reduce the heat to medium-low and cook for about 5 minutes. You want the edges to start setting while the center remains slightly runny.
Step 7: Transfer to the Oven
  1. Once the edges are firm, transfer the skillet directly into your preheated oven. Bake for an additional 15 to 20 minutes or until the center is firm and golden on top.
Step 8: Serve and Enjoy
  1. Remove the skillet from the oven and let it cool for a few minutes. Slice the frittata into wedges and serve warm. Enjoy with a simple salad or some crusty bread.

Notes

  • Use leftover pasta for convenience: Who doesn’t love saving time? Leftover gluten-free pasta works just as well if you prefer that option.
  • Experiment with different cheeses: Don’t limit yourself to Parmesan. Try feta, mozzarella, or even goat cheese for different flavor experiences.
  • Add seasonal vegetables: Incorporate fresh veggies, like zucchini or spinach. Sauté them in the skillet before adding eggs for a nutritious twist.
  • Keep an eye on the cooking time: Every oven has its quirks, so watch your frittata closely to avoid overcooking.
