Ingredients

  • 1 tablespoon cooking oil
  • 1 packet instant ramen 3 ounce
  • 1/2 small onion, diced
  • 1 teaspoon soy sauce
  • 1 teaspoon water
  • 1/4 teaspoon crushed red pepper flakes
  • 1 teaspoon finely chopped fresh parsley
  • 2 large eggs, lightly beaten
  • 1 small pinch of sea salt

Method

Step 1: Prepare the Noodles
  1. Start by boiling water in a small pot. Once it’s bubbling, add the ramen noodles. Cook according to package instructions, usually around 3 minutes, until tender. Don’t forget to use those chopsticks or a fork!
Step 2: Sauté the Onion
  1. While your noodles are cooking, heat the cooking oil in a separate pan over medium heat. Toss in the diced onion and sauté until it’s soft and translucent, about 2-3 minutes. The aroma? It's heavenly!
Step 3: Mix in the Egg
  1. In the same pan with the sautéed onions, reduce the heat to low. Pour in the beaten eggs and gently stir. Let them sit for a moment before scrambling, ensuring they remain creamy and do not overcook.
Step 4: Combine Flavors
  1. Once the noodles are ready, drain any excess water and add them to the pan with scrambled eggs and onions. Stir in the soy sauce, water, and crushed red pepper flakes. Mix thoroughly to ensure every strand of noodle is coated.
Step 5: Garnish and Serve
  1. Finally, sprinkle the chopped parsley on top, and add a dash of sea salt if desired. Spoon your delicious ramen noodles with egg into bowls, and dig in!

Notes

  • Use a Non-Stick Pan: This prevents the eggs from sticking and makes for an easy cleanup.
  • Don’t Overcook the Eggs: Aim for a creamy texture when scrambling the eggs. They should be just set and soft.
  • Experiment with Toppings: Think beyond parsley! Try sliced green onions, sesame seeds, or even crispy seaweed for texture.
  • Adjust Spice Levels: If you cannot handle heat, skip the red pepper or reduce the amount to suit your taste.
  • Add Fresh Veggies: Toss in some spinach or bok choy right at the end for added nutrition and freshness.
