Ingredients

  • 1/2 teaspoon pink Himalayan salt
  • 2 tablespoons unsweetened plant-based milk
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon onion powder
  • 6 medium-sized 6–8 Yukon Gold potatoes, peeled if desired
  • 1/4 cup finely chopped fresh chives
  • 3–4 tablespoons plant-based butter substitute
  • 5–6 cloves of roasted or raw garlic
  • 1 teaspoon fine sea salt
  • Water, just enough to submerge the potatoes

Method

Step 1: Prepare the Potatoes
  1. Start by washing the Yukon Gold potatoes thoroughly. If you prefer, you can peel them, but the skins add nutritious benefits and texture. Chop the potatoes into equal-sized chunks, about 1-2 inches in size, ensuring even cooking.
Step 2: Boil the Potatoes
  1. Fill a large pot with water, adding a sprinkle of sea salt. Bring the water to a boil over medium-high heat.
Add the chopped potatoes to the pot, ensuring they’re covered by at least an inch of water. Boil for about 15-20 minutes or until a fork easily pierces the potatoes.
Step 3: Roast or Prepare the Garlic
  1. While the potatoes are cooking, prepare the garlic. If you’re using raw garlic, finely chop it. For roasted garlic, simply squeeze the softened cloves out of their skins into a small bowl. Mash the garlic with a fork to release its flavor.
Step 4: Drain the Potatoes
  1. Once the potatoes are tender, drain them in a colander. Let them sit for a couple of minutes to ensure excess moisture is removed. This step prevents watery mashed potatoes.
Step 5: Mash the Potatoes
  1. Return the drained potatoes to the pot. Add the plant-based butter, garlic, onion powder, and both salts. Using a potato masher or a fork, begin mashing your potatoes until they reach your desired consistency.
Step 6: Stir in Milk and Chives
  1. Pour in the unsweetened plant-based milk, stirring continuously until the mixture becomes creamy. Then, fold in the chopped fresh chives for a burst of freshness and color. Taste the potatoes and adjust seasoning if needed.
Step 7: Serve and Enjoy!
  1. Transfer your mashed potatoes to a serving dish. If you want to make them extra special, top them with a few additional chives or a drizzle of plant-based butter. Enjoy your creation while it’s warm.

Notes

  • Choose the Right Potatoes: Yukon Golds are fantastic for this dish, but feel free to experiment with other varieties like Russets for a fluffier texture.
  • Don’t Skip the Garlic: Garlic adds depth. Roasted garlic will give you sweetness, while raw provides a stronger punch.
  • Make Ahead: Prepare these mashed potatoes in advance and reheat in the microwave with a splash of plant-based milk to restore creaminess.
  • Be Gentle While Mashing: Over-mashing can lead to gluey potatoes, so go easy on them.
  • Season to Taste: Adjust herbs and seasonings to make the dish personalized. Nutritional yeast can be added for a cheesy flavor.
