Ingredients

Filling:
  • 8 medium-large apples half tart, like Granny Smith, half sweet, like Honeycrisp; organic preferred
  • 3/4 tsp freshly grated ginger optional; or use 1/2 tsp ground ginger
  • 1/4 cup fresh apple juice or filtered water
  • 1 lemon, freshly squeezed about 2 Tbsp or 30 ml
  • 2/3 cup coconut sugar or organic cane sugar
  • 3 Tbsp arrowroot powder or cornstarch for thickening
  • 1 1/2 tsp ground cinnamon
  • 1 pinch grated nutmeg optional
  • 1/4 tsp ground cardamom optional
Topping:
  • 1/2 cup pecans, roughly chopped
  • 1/2 cup almond flour
  • 1/2 cup unbleached all-purpose flour
  • 1 cup rolled gluten-free oats
  • 1/2 cup coconut sugar or organic cane sugar
  • 1/2 cup dark muscovado sugar or organic brown sugar
  • 1/2 cup melted coconut oil or extra-virgin olive oil or mix half and half
  • 1 tsp ground cinnamon
  • 1/4 tsp fine sea salt
  • 1/4 tsp ground cloves optional

Method

Step 1: Preheat the Oven
  1. First things first, preheat your oven to 350°F (175°C). This ensures that your dessert cooks evenly from the start.
Step 2: Prepare the Apples
  1. Wash and peel the apples. Slice them into thin wedges for even cooking. You can choose your combination of tart and sweet apples at this stage. Place them in a large mixing bowl.
Step 3: Add Flavor to the Apples
  1. Now it’s time to infuse those apples with flavor. Add the freshly squeezed lemon juice, ginger, coconut sugar, cinnamon, nutmeg, cardamom, and arrowroot powder. Toss everything well until the apples are evenly coated. The sugar will start to draw moisture from the apples, forming a lovely syrup.
Step 4: Assemble the Filling
  1. Transfer the apple mixture into a greased baking dish. Ensure it’s spread evenly for uniform baking.
Step 5: Prepare the Topping
  1. In another bowl, mix together the pecans, almond flour, rolled oats, coconut sugar, dark muscovado sugar, cinnamon, and salt. Pour in the melted coconut oil. Using your hands or a fork, combine until the mixture resembles coarse crumbs.
Step 6: Add the Topping
  1. Sprinkle the prepared topping generously over the apple mixture. It should cover the apples completely, creating a barrier that allows the apples to steam while the topping crisps up.
Step 7: Bake
  1. Place the baking dish in the preheated oven. Bake for about 40-50 minutes, or until the topping is golden brown and the apples are tender. The smell wafting from the oven is simply irresistible!
Step 8: Cool and Serve
  1. Remove the dish from the oven and let it cool for a few minutes before serving. This allows the juices to settle a bit. Enjoy warm with your favorite dairy-free ice cream or whipped coconut cream.

Notes

  • Opt for a mix of apples: Combining different varieties enhances flavor and texture. Sweet and tart apples create a balanced taste.
  • Don’t skip the spices: Nutmeg and cardamom add depth. A pinch may seem small, but the impact on flavor is significant.
  • Experiment with sweeteners: If coconut sugar isn’t available, consider maple syrup or agave nectar for a different sweetness profile.
  • Let it cool before serving: Allowing it to rest enhances the crisp texture. Plus, it won't burn your tongue!
  • Feel free to add more: Throw in nuts, seeds, or even dried fruits like cranberries for extra texture and flavor.
